Mum’s White Spaghetti with breadcrumbs and raisins
4-5 Brioche buns
½ C Golden raisins
½ C Dark raisins
1 C Walnuts (roughly chopped)
1 lb Spaghetti or Linguine
Extra Virgin Olive oil
Preheat oven to 300º
Place brioche buns in a food processor, and pulse until the consistency of panko breadcrumbs.
Once processed, spread evenly on cookie sheet and toss with raisins and walnuts. Drizzle with olive oil and gently mix.
Boil water for pasta.
Bake breadcrumb mixture and stir every 10 min until golden brown.
While mixture is baking, cook pasta according to directions but finish slightly al dente and drain.
When breadcrumb mixture is finished, layer into serving dish, add layer of pasta and continue alternating. If pasta is dry, add olive oil as necessary to loosen mixture.
Serve at room temperature.
