Calamari Stewed in Tomato Sauce

Serves:​ 6-8​

Prep Time: 10 min.​

Cooking Time: 1 hour & 15 minutes

 

Ingredients:

 

1 ½ lbs​ Calamari, cleaned & sliced (½ inch)

1 ½ cups​ Sweet Onions, small dice

2 tbsp​ Garlic, minced

2 cups​ Celery, Diced

2 cups​ Button Mushrooms, Fresh, Sliced

1 qt.​ Marinara Sauce

¼ cup​ EVOO

½ tbsp​ Crushed Red Pepper Flakes

1 tsp​ Kosher Salt

½ tsp​ Fresh Cracked Black Pepper

1 tbsp​ Fresh Parsley

 

Directions:

 

1. Heat 1 tbsp of olive oil in a large sauté pan.

2. Add in the calamari & sauté just until the water from the squid starts to evaporate (2-3 minutes). Remove from sauté pan & set aside.

3. In a separate large pot heat the EVOO add& ad in the onions, garlic, red pepper flakes, celery, & mushroomsthen sauté until the onions become translucent.

4. Next add in the tomato sauce, parsley, & cooked calamari into the sautéed vegetables, cover with a lid, and cook over medium-low heat for at least an hour, or until squid becomes tender, stir occasionally.

5. Serve as a sauce over pasta or mashed potatoes.
